Serves:

Ingredients

  • 1 lb ground lamb
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 cup canned tomatoes
  • 1 cup water
  • 1 cup cooked chickpeas
  • 1 cup dried apricots
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a tagine or heavy pot over medium heat. Add onions and cook until translucent, about 5-7 minutes.

  2. Add garlic and cook for another minute.

  3. Add ground lamb and cook until browned, about 7-10 minutes.

  4. Add cumin, coriander, cinnamon, smoked paprika, chili flakes, and salt. Stir to combine and cook for another minute.

  5. Add canned tomatoes and water. Bring to a simmer and let cook for 30 minutes.

  6. Add chickpeas and apricots and continue to cook for another 30 minutes, or until lamb is tender.

  7. Serve hot with fresh cilantro.
