How To Make Salt Cod with Root Vegetables, Cream & Bacon

Ingredients

  • 1 lb salt cod, soaked overnight and drained
  • 2 tbsp olive oil
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.

  3. Add the diced onion, carrots, parsnips, potatoes, and garlic to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 8-10 minutes.

  4. Meanwhile, bring a pot of water to a boil. Add the soaked and drained salt cod to the boiling water and cook for 5 minutes. Drain the cod and flake it into small pieces.

  5. Add the flaked salt cod, crispy bacon, heavy cream, and thyme to the skillet with the cooked vegetables. Stir well to combine. Season with salt and pepper to taste.

  6. Transfer the mixture to a baking dish and bake in the preheated oven for 25-30 minutes, or until bubbling and golden on top.

  7. Remove from the oven and let cool for a few minutes before serving. Garnish with chopped parsley.
