How To Make Jerk Cod & Creamed Corn

Ingredients

  • 1 lb cod fillets
  • 2 tbsp jerk seasoning
  • 1 tbsp olive oil
  • 2 cups corn kernels
  • 1 cup heavy cream
  • 1 tbsp butter
  • 1/4 tsp chili powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Rub the jerk seasoning evenly onto both sides of the cod fillets.

  3. Heat the olive oil in a skillet over medium heat. Add the cod fillets and cook for 3-4 minutes per side until browned.

  4. Transfer the cod to a baking dish and place in the preheated oven for 8-10 minutes or until cooked through.

  5. In the same skillet, melt the butter and add the corn kernels. Cook for 5 minutes until tender.

  6. Add the heavy cream, chili powder, salt, and pepper to the skillet with the corn. Simmer for 5 minutes until the cream has thickened slightly.

  7. Serve the jerk cod over the creamed corn and garnish with fresh cilantro.
