Ingredients

  • 4 lamb chops
  • 4 large potatoes
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the grill to medium-high heat.

  2. Season the lamb chops with salt, black pepper, minced garlic, and dried rosemary.

  3. Place the lamb chops on the grill and cook for about 4-5 minutes per side for medium-rare, or adjust cooking time based on desired doneness.

  4. While the lamb chops are grilling, prepare the potato crush. Peel and cut the potatoes into small cubes.

  5. Place the potato cubes in a pot of salted water and bring it to a boil. Cook for about 10-12 minutes or until the potatoes are tender.

  6. Drain the potatoes and transfer them to a sheet pan.

  7. Using a fork or a potato masher, gently crush the potatoes to create a rustic texture.

  8. Drizzle the crushed potatoes with olive oil and season with salt and black pepper.

  9. Place the sheet pan on the grill and cook the potato crush for 8-10 minutes, or until crispy and golden brown.

  10. Remove the lamb chops from the grill and let them rest for a few minutes before serving.

  11. Serve the grilled lamb chops with the crispy potato crush and garnish with fresh parsley.
