Ingredients

  • 4 salmon fillets
  • 4 large leeks, trimmed and cleaned
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 sprigs fresh dill
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cut 4 large rectangles of parchment paper, big enough to wrap around each salmon fillet.

  3. Slice the leeks lengthwise and blanch them in boiling water for 3 minutes. Drain and pat dry.

  4. Brush each piece of parchment paper with olive oil.

  5. Place a salmon fillet on each piece of parchment paper and season with salt and pepper.

  6. Top each fillet with a blanched leek, a sprig of fresh dill, and a few slices of lemon.

  7. Fold the parchment paper over the salmon and fold the edges to seal the parcel.

  8. Place the parcels on a baking sheet and bake for 25 minutes, or until the salmon is cooked through.

  9. Carefully open the parcels and serve the leeky salmon hot.
