Ingredients
- 1 celery root, peeled and diced
- 2 cups vegetable broth
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Salt and pepper to taste

In a large pot, bring the vegetable broth to a boil. Add the diced celery root and minced garlic.

Reduce heat to low and simmer for 15-20 minutes, or until the celery root is fork-tender.

Drain the celery root and garlic, reserving a small amount of the cooking liquid.

Transfer the cooked celery root and garlic to a food processor or blender. Add the heavy cream and blend until smooth and creamy, adding a little bit of the reserved cooking liquid if needed to reach desired consistency.
