Ingredients

  • 1 celery root, peeled and diced
  • 2 cups vegetable broth
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the vegetable broth to a boil. Add the diced celery root and minced garlic.

  2. Reduce heat to low and simmer for 15-20 minutes, or until the celery root is fork-tender.

  3. Drain the celery root and garlic, reserving a small amount of the cooking liquid.

  4. Transfer the cooked celery root and garlic to a food processor or blender. Add the heavy cream and blend until smooth and creamy, adding a little bit of the reserved cooking liquid if needed to reach desired consistency.

  5. Season with salt and pepper to taste.

  6. Serve hot as a side dish or use as a base for other recipes.
