How To Make Prawn & Chorizo Frittata

Ingredients

  • 8 prawns, peeled and deveined
  • 100g chorizo, sliced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a round baking dish.

  2. In a large skillet, heat the olive oil over medium heat. Add the prawns and cook for 2-3 minutes until they turn pink. Remove the prawns from the skillet and set aside.

  3. In the same skillet, add the sliced chorizo and cook until crispy. Remove the chorizo from the skillet and set aside.

  4. In the same skillet, add the diced bell pepper and onion. Cook until they become tender.

  5. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.

  6. Pour the egg mixture into the skillet with the cooked bell pepper and onion. Add the cooked prawns and chorizo. Stir gently to combine.

  7. Transfer the mixture to the greased baking dish and bake in the preheated oven for about 15-20 minutes until the frittata is cooked through.

  8. Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley.
