Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water
  • 1 cup passion fruit juice
  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Stir in the hot water until the batter is smooth.

  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

  8. In a separate bowl, whisk together the passion fruit juice, powdered sugar, and softened butter until smooth and creamy.

  9. Place one cake layer on a serving plate and spread a layer of the passion fruit icing on top. Place the second cake layer on top and frost the entire cake with the remaining icing.

  10. Slice and serve the Chocolate Layer Cake with Passion Fruit Icing.
