How To Make Shelby’s Microwave Meatloaf

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, bell pepper, garlic, Worcestershire sauce, salt, and pepper. Mix until well combined.

  2. Shape the mixture into a loaf shape and place on a microwave-safe dish.

  3. Microwave on high for 10 minutes, then carefully remove the dish from the microwave and drain any excess fat.

  4. Return the dish to the microwave and cook for an additional 8-10 minutes, or until the meatloaf reaches an internal temperature of 160°F.

  5. Remove from the microwave and let it rest for a few minutes before slicing and serving.
