
How To Make Ostrich Steaks with Calvados Sauce

Ingredients
- 4 ostrich steaks
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, minced
- 1 cup Calvados apple brandy
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp Dijon mustard
- 2 tbsp fresh parsley, chopped
Instructions

Season the ostrich steaks with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Cook the steaks for 4-5 minutes per side, or until desired doneness. Remove the steaks from the skillet and set aside.

In the same skillet, add the minced shallot and cook until softened, about 2 minutes.

Carefully pour in the Calvados brandy and cook for 2-3 minutes, allowing it to reduce slightly.

Stir in the chicken broth and simmer for an additional 5 minutes.

Reduce the heat to low and whisk in the heavy cream and Dijon mustard. Cook for 2-3 minutes until the sauce thickens.

Return the ostrich steaks to the skillet and cook for an additional 2-3 minutes, allowing them to heat through.

Serve the ostrich steaks with the Calvados sauce, garnished with fresh parsley.
