Ingredients
- 2 lbs octopus, cleaned and cut into pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 potatoes, peeled and chopped
- 2 carrots, peeled and chopped
- 1 red bell pepper, chopped
- 2 tomatoes, chopped
- 1 cup white wine
- 2 cups fish or vegetable stock
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper, to taste
Instructions

In a large pot, heat olive oil over medium heat. Add onion and garlic, and cook until soft.

Add octopus, potatoes, carrots, and red bell pepper. Stir in wine, stock, and paprika. Season with salt and pepper.

Bring to a simmer, cover and cook for 1 hour and 30 minutes or until octopus is tender.

Serve hot with crusty bread.
