Ingredients
- 2 lbs fresh mussels
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp red pepper flakes
- 1 can diced tomatoes
- 1 cup vegetable broth
- 2 tbsp chopped fresh parsley
- salt and pepper to taste
Instructions

Clean and debeard mussels.

In a large pot, heat olive oil and cook onion, garlic, and red pepper flakes until soft.

Add diced tomatoes and vegetable broth and bring to a boil.

Add mussels to the pot and cover with a lid.

Cook until mussels open, about 5-7 minutes. Discard any unopened mussels.

Stir in parsley and salt and pepper to taste.

Serve hot with crusty bread.
