How To Make Mussels in Coconut Milk Broth

Ingredients

  • 2 lbs of fresh mussels
  • 1 tbsp of oil
  • 1 large shallot, diced
  • 2 garlic cloves, minced
  • 1 red chili, thinly sliced
  • 1 inch ginger, grated
  • 1 tbsp of fish sauce
  • 1 can of coconut milk
  • 1/4 cup of chopped fresh cilantro

Instructions

  1. Clean mussels and discard any broken or opened ones.

  2. Heat oil in a large pot and sauté shallot, garlic, chili, and ginger until aromatic.

  3. Add in the mussels and pour in the fish sauce and coconut milk, then stir to mix well.

  4. Cover and cook until the mussels open and are cooked through, around 5-8 minutes.

  5. Stir in cilantro and serve hot with crusty bread or over rice.
