  • 8 ounces whole wheat pasta
  • 1 can tuna in water, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/4 cup black olives, sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.

  2. In a large bowl, combine tuna, cherry tomatoes, red onion, cucumber, black olives, and fresh parsley.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

  4. Pour the dressing over the tuna mixture and toss to coat.

  5. Add the cooked pasta to the bowl and gently toss until well combined.

  6. Serve the healthy tuna pasta at room temperature or chilled.
