Ingredients

  • 200g dark chocolate
  • 150g butter
  • 150g sugar
  • 3 eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 lime (zest and juice)
  • powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.

  2. Melt the dark chocolate and butter in a heatproof bowl over a pan of simmering water. Stir until smooth and set aside to cool slightly.

  3. In a separate bowl, whisk together the sugar and eggs until pale and fluffy.

  4. Gradually add the melted chocolate mixture to the egg mixture while whisking continuously.

  5. Sift in the flour and baking powder, then add the lime zest and juice. Mix until well combined.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and allow the cake to cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  9. Dust with powdered sugar before serving.
