How To Make Summer Fruit Quinoa Salad

Ingredients
- 1 cup of cooked quinoa
- 1 cup of mixed summer berries (strawberries, blueberries, raspberries)
- 1 cup of diced watermelon
- 1 cup of diced pineapple
- 1/4 cup of chopped fresh mint leaves
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of honey
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

In a large mixing bowl, combine the cooked quinoa, mixed summer berries, diced watermelon, diced pineapple, and chopped mint leaves.

In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper. Pour the dressing over the quinoa and fruit mixture. Toss gently to combine.

Sprinkle the crumbled feta cheese over the salad.
