How To Make Cheddar & Sweetcorn Scones

Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, cold and cubed
- 1 cup cheddar cheese, grated
- 1/2 cup sweetcorn kernels (fresh or frozen)
- 1/4 cup green onions, finely chopped
- 1/2 cup milk
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, and salt.

Add the cold butter to the flour mixture and use your fingers or a pastry cutter to cut it into the flour until the mixture resembles coarse crumbs.

Stir in the grated cheddar cheese, sweetcorn kernels, and green onions.

Gradually add the milk and mix until the dough comes together.

Turn the dough out onto a lightly floured surface and knead it a few times to bring it together.

Roll the dough out to about 1-inch thickness and use a biscuit cutter to cut out scones.

Place the scones onto the prepared baking sheet, leaving some space between each one.

Brush the tops of the scones with the beaten egg to give them a nice golden color.

Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and cooked through.

Remove from the oven and allow to cool slightly before serving.
