How To Make Avocado and Quinoa Salad

A nutritious and delicious salad with creamy avocado and protein-packed quinoa.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 ripe avocados, diced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa in cold water and drain.

  2. In a large pot, bring water to boil. Add quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until water is absorbed and quinoa is tender.

  3. In a large bowl, combine cooked quinoa, diced avocado, red onion, red bell pepper, and cilantro.

  4. Squeeze lime over the salad and season with salt and pepper.

  5. Toss gently to combine all ingredients.

  6. Chill in the refrigerator for at least 1 hour before serving.
