- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 large carrots, peeled and chopped
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh parsley for garnish
