  • 4 cups mixed salad greens
  • 1 cup shredded red cabbage

  • 1 cup sliced cucumbers
  • 1 cup sliced radishes
  • 1/2 cup pomegranate seeds
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large serving bowl, combine the mixed salad greens, red cabbage, carrots, cucumbers, radishes, pomegranate seeds, walnuts, and feta cheese.

  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to combine.
