  • 6 cups fresh spring peas
  • 1/2 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice

  1. Blanch the spring peas in boiling water for 2 minutes, then transfer to ice water to cool.
