How To Make Sugar Snap Pea, Avocado & Orange Salad

Ingredients
- 2 cups Sugar Snap Peas, ends trimmed
- 2 Avocados, sliced
- 2 Oranges, segmented
- 1/4 cup Red Onion, thinly sliced
- 1/4 cup Fresh Mint leaves, torn
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice
- Salt and Pepper, to taste
Instructions

Bring a pot of salted water to a boil. Prepare a bowl of ice water.

Blanch the Sugar Snap Peas in the boiling water for 1-2 minutes.

Immediately transfer the Sugar Snap Peas to the ice water to stop the cooking process. Drain and set aside.

In a large bowl, combine the blanched Sugar Snap Peas, Avocado slices, Orange segments, Red Onion, and Fresh Mint leaves.

In a small bowl, whisk together the Olive Oil, Lemon Juice, Salt, and Pepper.

Drizzle the dressing over the salad and toss gently to combine.
