Serves:

Ingredients

  • 2 cups Sugar Snap Peas, ends trimmed
  • 2 Avocados, sliced
  • 2 Oranges, segmented
  • 1/4 cup Red Onion, thinly sliced
  • 1/4 cup Fresh Mint leaves, torn
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • Salt and Pepper, to taste

Instructions

  1. Bring a pot of salted water to a boil. Prepare a bowl of ice water.

  2. Blanch the Sugar Snap Peas in the boiling water for 1-2 minutes.

  3. Immediately transfer the Sugar Snap Peas to the ice water to stop the cooking process. Drain and set aside.

  4. In a large bowl, combine the blanched Sugar Snap Peas, Avocado slices, Orange segments, Red Onion, and Fresh Mint leaves.

  5. In a small bowl, whisk together the Olive Oil, Lemon Juice, Salt, and Pepper.

  6. Drizzle the dressing over the salad and toss gently to combine.

  7. Serve the Sugar Snap Pea, Avocado & Orange Salad chilled.
