How To Make Sticky Pork Belly with Green Papaya Salad & Chilli Lime Dressing

Ingredients
- 1 kg pork belly, skin-on
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 2 tbsp honey
- 1 tsp five-spice powder
- 1 tsp minced garlic
- 1 tsp minced ginger
- 1 green papaya, julienned
- 1 carrot, julienned
- 1 red chili, thinly sliced
- 2 spring onions, thinly sliced
- Handful of mint leaves
- Handful of cilantro leaves
- Juice of 2 limes
- 2 tbsp fish sauce
- 1 tbsp sesame oil
- 1 tbsp brown sugar
Instructions

Preheat the oven to 160°C (320°F).

Score the pork belly skin in a criss-cross pattern. Place the pork belly in a roasting pan.

In a small bowl, mix together soy sauce, hoisin sauce, honey, five-spice powder, minced garlic, and minced ginger.

Pour the sauce mixture over the pork belly, making sure it coats all sides. Cover the pan with foil.

Roast the pork belly in the preheated oven for 2 hours. Remove the foil and roast for another hour, until the skin is crispy.

While the pork is roasting, prepare the green papaya salad. In a large bowl, combine julienned green papaya, carrot, sliced chili, spring onions, mint leaves, and cilantro leaves.

In a separate small bowl, whisk together lime juice, fish sauce, sesame oil, and brown sugar to make the dressing.

Pour the dressing over the green papaya salad and toss well to combine.

Once the pork belly is cooked and crispy, remove from the oven and let it rest for a few minutes. Slice into thick pieces.

Serve the sticky pork belly alongside the green papaya salad. Drizzle any remaining sauce from the roasting pan over the pork.
