Ingredients

  • 1 ham hock
  • 1 cup frozen peas, thawed
  • 2 cups watercress
  • 1 red onion, thinly sliced
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, cover the ham hock with water and bring to a boil. Reduce heat and simmer for 2 hours or until tender. Remove the ham hock from the pot and let it cool. Once cool, shred the meat into bite-sized pieces.

  2. In a medium-sized bowl, combine the peas, watercress, red onion, mint, and parsley.

  3. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  4. Add the shredded ham hock to the bowl with the salad ingredients. Drizzle the dressing over the salad and toss to combine.

  5. Serve the pea, ham hock, and watercress salad chilled or at room temperature.
