Ingredients
- 8 cups spinach leaves
- 1 large avocado, diced
- 1 pound prawns, peeled and deveined
- 2 tablespoons olive oil
- 1 lemon, juiced
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

In a large bowl, combine the spinach and diced avocado.

In a separate pan, heat the olive oil over medium heat. Add the prawns and garlic, and cook for 2-3 minutes on each side until pink and cooked through.

Add the cooked prawns to the spinach and avocado mixture.

Drizzle the lemon juice over the salad, and season with salt and pepper.

Toss everything together until well coated.
