How To Make Roasted Chicken & New Potato Salad

Ingredients
- 4 chicken breasts
- 1.5 lbs new potatoes
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- dressing ingredients:
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the chicken breasts on a baking sheet and drizzle with 1 tbsp of olive oil. Sprinkle with salt, pepper, and paprika. Bake for 25-30 minutes or until cooked through.

While the chicken is roasting, cut the new potatoes into bite-sized pieces. Place them in a pot of salted boiling water and cook for 10-12 minutes or until tender. Drain and set aside.

In a large mixing bowl, combine the cooked new potatoes, salad greens, cherry tomatoes, red onion, parsley, and feta cheese.

In a small jar, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, salt, and pepper to make the dressing.

Pour the dressing over the salad ingredients and toss to coat evenly.

Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

Divide the salad onto plates and top with the sliced roasted chicken.
