Ingredients

  • 4 boneless, skinless chicken breasts
  • zest and juice of 2 lemons
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup couscous
  • 1 cup chicken broth
  • 1/2 cup dried cranberries
  • 1/4 cup sliced green olives
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large bowl, combine the lemon zest, lemon juice, minced garlic, olive oil, dried oregano, salt, and black pepper. Add the chicken breasts and coat them well in the marinade. Let the chicken marinate for at least 10 minutes.

  2. Heat a grill or grill pan over medium-high heat. Grill the chicken breasts for about 5-6 minutes on each side, or until cooked through and no longer pink in the center. Remove from heat and let them rest for a few minutes before slicing.

  3. In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, dried cranberries, sliced green olives, and chopped fresh parsley. Remove from heat, cover, and let it sit for 5 minutes.

  4. Fluff the couscous with a fork and serve it alongside the sliced lemon chicken.
