How To Make Leek, Butter Bean & Chorizo Gratin

Ingredients
- 2 large leeks, sliced
- 1 can of butter beans, drained and rinsed
- 200g chorizo, sliced
- 2 cloves of garlic, minced
- 200ml heavy cream
- 100g grated cheddar cheese
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a large skillet, cook the chorizo slices until crispy. Remove from the skillet and set aside.

In the same skillet, sauté the sliced leeks and minced garlic until soft and fragrant.

Add the butter beans and cooked chorizo to the skillet and mix well.

Season with salt and pepper to taste.

Transfer the mixture to a baking dish.

Pour the heavy cream over the mixture and sprinkle with grated cheddar cheese.

Bake in the preheated oven for 30-35 minutes, or until the cheese is golden and bubbly.

Allow to cool for a few minutes before serving.
