Ingredients

  • 2 cups cooked quinoa
  • 4 cups mixed greens
  • 1 cup sliced cucumber
  • 1 cup shredded carrot
  • 1 cup edamame
  • 1/2 cup sliced avocado
  • 1/2 cup sliced radish
  • 1/4 cup green onion
  • 1/4 cup cilantro
  • 1/2 cup tahini
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup water
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, mixed greens, cucumber, shredded carrot, edamame, avocado, radish, green onion, and cilantro.

  2. In a small bowl, whisk together the tahini, soy sauce, honey, water, garlic, salt, and pepper until smooth.
