Ingredients

  • 6 cups mixed greens
  • 1 cup cooked quinoa
  • 1 cup cooked edamame
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup sliced almonds
  • 1/4 cup dried cranberries
  • for the citrus dressing:
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, quinoa, edamame, cherry tomatoes, avocado, sliced almonds, and dried cranberries.

  2. In a small bowl, whisk together the orange juice, lemon juice, honey, Dijon mustard, and olive oil. Season with salt and pepper.

  3. Drizzle the citrus dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
