How To Make Freshii Green Goddess Bowl Recipe
This bowl is loaded with nutrient-rich veggies and topped with a creamy avocado dressing.
Serves:
Ingredients
- 4 cups mixed greens
- 2 cups cooked quinoa
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup edamame beans
- 1/4 cup toasted pumpkin seeds
- Juice of 1/2 a lemon
- Salt and pepper to taste
- For the avocado dressing:
- 1 ripe avocado
- 1/4 cup fresh basil leaves
- 1/4 cup plain Greek yogurt
- Juice of 1/2 a lemon
- Salt and pepper to taste
Instructions

In a large bowl, assemble the mixed greens, cooked quinoa, avocado slices, cherry tomatoes, diced cucumber, edamame beans and toasted pumpkin seeds.

In a blender or food processor, blend together the ripe avocado, fresh basil leaves, plain Greek yogurt, lemon juice, salt and pepper to make the avocado dressing.

Drizzle the avocado dressing over the bowl and add a squeeze of lemon juice and salt and pepper to taste if desired.

Toss everything together and serve immediately.
