  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 1 potato, peeled and diced
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

  2. Add the diced potato, zucchini, green beans, diced tomatoes, vegetable broth, dried thyme, and dried oregano to the pot. Season with salt and pepper.

  3. Bring the soup to a boil, then reduce the heat to low and let it simmer for 30 minutes, or until the vegetables are cooked through.

  4. Taste and adjust the seasoning if needed. Serve hot, garnished with fresh parsley.
