Ingredients

  • 1 cup cooked quinoa
  • 4 cups of mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1 cup red cabbage, chopped
  • 1 cup carrots, shredded
  • 1/2 cup edamame
  • 1 avocado, sliced
  • 1/2 cup cashews
  • 4 tbsp tahini sauce
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package directions and set aside to cool.

  2. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red cabbage, carrots, and edamame.

  3. Add cooled quinoa and mix well.

  4. Divide mixture among four bowls.

  5. Top each bowl with avocado slices and cashews.

  6. Drizzle tahini sauce over the top and sprinkle with salt and pepper.
