  • 1 lb sirloin steak, thinly sliced
  • 1 large onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 8 oz mushrooms, sliced
  • 3 cloves of garlic, minced
  • 4 cups beef broth
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • 1 cup shredded provolone cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sliced steak and cook until browned. Remove steak from the pot and set aside.

  2. In the same pot, add the sliced onion, bell peppers, mushrooms, and minced garlic. Cook until the vegetables are softened.

  3. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1 minute.

  4. Slowly add the beef broth while stirring constantly. Bring to a boil and then reduce heat to simmer for 10 minutes.

  5. Stir in the milk and shredded provolone cheese until the cheese has melted and the soup is creamy.

  6. Return the cooked steak to the pot and season with salt and pepper to taste. Cook for an additional 5 minutes.

  7. Serve the Philly Cheese Steak Soup hot, garnished with extra provolone cheese if desired.
