How To Make Mediterranean-style Oysters

Ingredients

  • 24 fresh oysters
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 tsp red pepper flakes
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.

  2. Shuck the fresh oysters and place them on a baking sheet.

  3. In a small skillet, heat the olive oil over medium heat.

  4. Add the minced garlic and cook until fragrant, about 1 minute.

  5. Add the diced cherry tomatoes, parsley, basil, red pepper flakes, salt, and pepper.

  6. Cook for 5 minutes, stirring occasionally, until the tomatoes soften and release their juices.

  7. Spoon the tomato and herb sauce over each oyster.

  8. Place the oysters on the grill and cook for 5-7 minutes, until the edges begin to curl and the sauce is bubbly.

  9. Remove from the grill and serve immediately with lemon wedges.
