How To Make Beetroot, Apple & Broad Bean Tabbouleh

Ingredients
- 2 large beetroots, cooked and diced
- 1 apple, diced
- 1 cup broad beans, blanched and peeled
- 1 cup cooked quinoa
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- Salt to taste
- Pepper to taste
Instructions

In a large mixing bowl, combine the diced beetroot, apple, broad beans, cooked quinoa, parsley, mint, and cilantro.

In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Pour the dressing over the salad ingredients and toss gently to combine.

Serve the tabbouleh immediately or refrigerate for up to 2 hours to allow the flavors to meld.
