How To Make Tortilla & Bean Salad

Ingredients

  • 4 large flour tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F and cut the tortillas into small strips.

  2. Place the tortilla strips on a baking sheet and bake for about 8-10 minutes or until crispy.

  3. In a large bowl, combine the black beans, corn, red bell pepper, red onion, cilantro, and avocado.

  4. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  5. Add the crispy tortilla strips to the salad just before serving.
