How To Make Tomato, Burrata & Broad Bean Salad

Serves:

Ingredients

  • 4 large tomatoes, sliced
  • 1 cup of fresh broad beans, shelled
  • 1 ball of burrata cheese, torn into pieces
  • 1/4 cup of extra virgin olive oil
  • 2 tbsp of balsamic vinegar
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Bring a pot of salted water to a boil and blanch the broad beans for 3-4 minutes. Drain and rinse with cold water.

  2. In a large bowl, combine the sliced tomatoes, blanched broad beans, and torn burrata cheese.

  3. Drizzle with extra virgin olive oil and balsamic vinegar. Season with salt and pepper to taste.

  4. Gently toss the salad to combine all the ingredients.

  5. Serve the tomato, burrata & broad bean salad garnished with fresh basil leaves.
