How To Make Chicken Skewers with Broad Bean Hummus

Ingredients

  • 1 lb chicken breast, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1 can broad beans, drained
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 4 wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the diced chicken, minced garlic, olive oil, lemon juice, paprika, cumin, salt, and pepper. Mix well and marinate for 10 minutes.

  2. Preheat the grill or a grill pan over medium-high heat.

  3. Thread the marinated chicken onto the soaked skewers.

  4. Grill the chicken skewers for about 7-8 minutes per side, or until cooked through.

  5. Meanwhile, prepare the broad bean hummus by combining the drained broad beans, tahini, lemon juice, olive oil, minced garlic, salt, and pepper in a food processor. Blend until smooth and creamy.

  6. Serve the grilled chicken skewers with the broad bean hummus on the side.
