How To Make Juicy Cajun Roast Chicken
This cajun chicken is bursting with the warm flavors of cajun seasoning and tang from the lemon, and is made by roasting in the oven.

Ingredients
- ½ cup Cajun seasoning
- 1 tsp salt
- 1 tsp lemon juice
- ½ tsp ground black pepper
- ½ cup olive oil
- 1 chicken, whole, defrosted
To serve:
- salad
- mashed potatoes
- parsley, chopped
Instructions
- First, preheat the oven to approximately 420 degrees F.
- While the oven is warming, combine the Cajun seasoning, salt, lemon, pepper, and olive oil.
- Rub the mixture all over the chicken, including inside the cavity.
- Transfer the chicken into a roasting pan covered with aluminum foil, place inside the oven and cook on high.
- After 15 minutes, turn the heat down to 375 degrees F and leave until fully cooked, approximately 20 minutes per pound or until internal temperature regusters 165 degrees F.
- Serve hot with a side dish of salad and mashed potatoes.
