Ingredients
- 2 pounds beef roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 onion, sliced
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions

Preheat the oven to 325°F (160°C).

Season the beef roast with salt, pepper, garlic powder, thyme, and rosemary, rubbing it all over the meat.

Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned.

In a roasting pan, place the sliced onions, carrots, and celery. Place the seared beef on top.

Roast in the preheated oven for about 2 hours, or until the internal temperature reaches your desired level of doneness (medium-rare: 130°F / 55°C, medium: 140°F / 60°C, medium-well: 150°F / 65°C).

Remove the roast from the oven and let it rest for 10-15 minutes before slicing.

Slice the roast beef into thin slices and serve with the roasted vegetables.
