Ingredients
- 4 cups cooked rice, preferably cold
- 3 tablespoons vegetable oil
- 4 large eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional: sliced green onions for garnish
Instructions

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.

Add the beaten eggs and scramble until fully cooked. Remove the scrambled eggs from the pan and set aside.

In the same pan, heat the remaining oil. Add the minced garlic and sauté until fragrant.

Add the mixed vegetables and stir-fry for 2-3 minutes until they start to soften.

Add the cooked rice to the pan and break up any clumps with a spatula. Stir-fry for another 3-4 minutes.

Pour the soy sauce and sesame oil over the rice and vegetables. Mix well.

Add back the scrambled eggs and toss everything together until heated through.

Season with salt and pepper to taste.

Optional: Garnish with sliced green onions before serving.
