Ingredients

  • 4 chorizo sausages
  • 4 hot dog buns
  • 1 cup chimichurri sauce
  • 1 red onion, thinly sliced
  • 1 jalapeno, seeded and sliced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop grill pan.

  2. Grill the chorizo sausages until cooked through, about 10 minutes.

  3. Toast the hot dog buns on the grill for a minute or two until lightly charred.

  4. Spread a generous amount of chimichurri sauce on each bun.

  5. Place a grilled chorizo sausage on each bun.

  6. Top with sliced red onion, jalapeno, and cilantro.

  7. Season with salt and pepper to taste.

  8. Serve immediately and enjoy!
