Ingredients

  • 4 fish fillets (such as cod or tilapia)
  • 1 cup cashews, finely chopped
  • 2 red chillies, seeded and finely chopped
  • Zest of 1 lime
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow dish, combine the chopped cashews, chillies, lime zest, salt, and pepper.

  3. Brush each fish fillet with olive oil, ensuring both sides are coated.

  4. Dip each fillet into the cashew mixture, pressing down firmly to ensure the crust sticks.

  5. Place the coated fillets on the prepared baking sheet and drizzle with lime juice.

  6. Bake for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.

  7. Serve hot and enjoy!
