This mock zucchini crab cakes recipe is a good alternative to crab cakes for vegetarians. It has the same soft texture of regular crab cakes with a nice outer crisp.

Ingredients

  • 2 ½ cups zucchini, grated
  • 1 egg, beaten
  • 2 tbsp butter , melted
  • 1 cup bread crumbs, seasoned
  • 1/4 cup onions, minced
  • 1 tsp Old Bay Seasoning, may add more to taste
  • 1/4 cup all-purpose flour
  • 1/2 cup vegetable oil, for frying

Instructions

  1. In a large bowl, combine zucchini, egg, and butter.

  2. Stir in seasoned bread crumbs, minced onion and seasoning. Mix well.

  3. Shape mixture into patties and dredge each one in flour.

  4. In a medium skillet, heat oil over medium-high heat until hot.

  5. Fry patties until golden brown on both sides. Drain on paper towels and serve.
