Working for an entire day can drain out all your energy. It’s even tiring having to think of what to cook for dinner, even when you’re extremely tired. But if you’re starving but want an easy meal that’s cooked in a jiffy, our kielbasa recipe is a dish to try. It’s made of Polish sausages and cooked with feta cheese, baby spinach, and baby potatoes.

This homemade kielbasa recipe with potatoes and spinach is a quick and easy dish to make in just 20 minutes.

Ingredients

  • 1 lb baby potatoes, cleaned, microwaved until tender
  • ¾ lb kielbasa, cut into ¼-inch pieces
  • ½ cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • ½ tsp dried thyme
  • ¼ tsp pepper
  • 2 cups baby spinach, frozen and thawed

For Garnish:

  • feta cheese

Instructions

  1. In a large skillet over medium heat, coat the pan with olive oil and sauté the kielbasa, onion and garlic.
  2. Once the onion is tender, add the potatoes to the skillet along with the brown sugar, dijon, thyme and pepper.
  3. Allow the mixture to bubble.
  4. Reduce heat and add spinach and saute for 5 minutes. Remove the skillet from heat and transfer it to a serving bowl.
  5. Sprinkle crumbled feta on top of the dish before serving.
