How To Make Updated Chicken Chow Mein
Chicken chow mein is given a modern twist in this easy-to-follow recipe. Egg noodles are stir-fried with basil, chili, peas, and chicken sausage.

Ingredients
- 5tbspvegetable oil
- 1lbfresh plain chicken sausages
- 4clovegarlic
- 2tbspginger,minced
- 4ozsnow peas
- 2fresh hot long red chilis
- cupfresh orange juice
- ½lbchinese egg noodles,fresh or dried
- 1cupchicken stock
- 3tbsphoisin sauce
- 2tspcornstarch
- salt
- ½cupbasil leaves,slivered
Instructions

In a wok, heat 2 tablespoons oil. Add chicken sausage and stir-fry over high heat, breaking it up, until just cooked through.

Transfer to a plate. Heat remaining 3 tablespoons oil in wok.

Add garlic and ginger and stir-fry over moderately high heat until golden.

Off heat, stir in snow peas and chilis for 1 minute.

Add orange juice and stir over moderately high heat for 30 seconds.

Add sausage, noodles, and stock mixture, season with salt, and stir-fry until sauce is thickened.

Remove from heat, stir in basil, and serve.
