How To Make Updated Chicken Chow Mein

Chicken chow mein is given a modern twist in this easy-to-follow recipe. Egg noodles are stir-fried with basil, chili, peas, and chicken sausage.

Ingredients

  • 5tbspvegetable oil
  • 1lbfresh plain chicken sausages
  • 4clovegarlic
  • 2tbspginger,minced
  • 4ozsnow peas
  • 2fresh hot long red chilis
  • cupfresh orange juice
  • ½lbchinese egg noodles,fresh or dried
  • 1cupchicken stock
  • 3tbsphoisin sauce
  • 2tspcornstarch
  • salt
  • ½cupbasil leaves,slivered

Instructions

  1. In a wok, heat 2 tablespoons oil. Add chicken sausage and stir-fry over high heat, breaking it up, until just cooked through.

  2. Transfer to a plate. Heat remaining 3 tablespoons oil in wok.

  3. Add garlic and ginger and stir-fry over moderately high heat until golden.

  4. Off heat, stir in snow peas and chilis for 1 minute.

  5. Add orange juice and stir over moderately high heat for 30 seconds.

  6. Add sausage, noodles, and stock mixture, season with salt, and stir-fry until sauce is thickened.

  7. Remove from heat, stir in basil, and serve.
