Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup water
- 1 tablespoon vegetable oil
- filling options:
- 1 cup mashed potatoes
- 1 cup sauerkraut
- 1 cup farmer’s cheese
- 1 cup fruit preserves
- for serving:
- Sour cream
- Butter
- Chopped green onions (optional)
Instructions

In a large bowl, mix the flour and salt. Create a well in the center and add the egg, water, and oil. Mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Cover and let it rest for 15 minutes.

Roll out the dough to about 1/8 inch thickness. Cut out circles using a round cookie cutter or glass.

Place a spoonful of your desired filling in the center of each dough circle. Fold the circle in half and pinch the edges to seal tightly.

Bring a large pot of salted water to a boil. Cook the pierogi in small batches for about 5-7 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a plate.

If desired, melt butter in a pan and sauté the cooked pierogi until lightly browned.

Serve hot pierogi with a dollop of sour cream, a drizzle of melted butter, and chopped green onions if desired.
