  • 1 lb fresh beef liver
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp vegetable oil
  • 4 cups beef broth


  1. In a food processor, blend the beef liver until smooth.

  2. In a large bowl, combine the liver, onion, garlic, bread crumbs, parsley, salt, pepper, and paprika. Mix well.

  3. Shape the mixture into small balls about 1 inch in diameter.

  4. Heat the vegetable oil in a large skillet over medium heat. Add the liver dumplings and cook until browned on all sides, about 5 minutes.

  5. Pour the beef broth into the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.

  6. Serve the liver dumplings with the broth as a comforting appetizer.
