Ingredients

  • 4 slices of calves’ liver (about 1 pound)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar
  • 8 slices of prosciutto

Instructions

  1. Season the calves’ liver with salt and pepper on both sides.

  2. Heat the olive oil in a large skillet over medium-high heat. Add the calves’ liver and cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and set aside.

  3. In the same skillet, add the sliced onion and cook over medium heat until softened, about 5 minutes.

  4. Add the brown sugar and balsamic vinegar to the skillet and cook for an additional 5 minutes, until the onions are caramelized and sticky.

  5. Meanwhile, in a separate skillet, cook the prosciutto slices over medium heat until crispy, about 2 minutes per side.

  6. To serve, place a slice of calves’ liver on each plate. Top with a spoonful of the sticky onion relish and a few slices of crispy prosciutto.

  7. Serve immediately.
